So here goes an AMAZING dish to make up for it....mmmK?!
Ingredients:
- 2 tbsp coconut oil
- 1.5lbs boneless, skinless chicken thighs, cut into small pieces
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1/4 cup chopped walnuts
- 1 large sweet potato, peeled and grated
- 1 apple; cored, peeled, and chopped
- 1/2 tsp red pepper flakes
- 1/4 cup apple cider vinegar
- 2 large handfuls of green....I used a baby spring mix
Directions:
- Heat the coconut oil in a large skillet over medium/high heat.
- Add the chicken and season with salt and pepper, cook until browned (about 3 minutes).
- Add the walnuts and cook another 3 minutes.
- Add the sweet potato, apple, and red pepper flakes and cook 4 minutes or until the chicken is fully cooked.
- Add the apple cider vinegar and mis together.
- Add the greens and cook for about 30 seconds to wilt the leaves.
- Serve immediately.
