Edamame Salad

It's Summer and a time for cookouts! What do you do when you get invited to a cookout?? Do you cheat and eat enormous amounts of food? Do you deprive yourself of any food? What's the best thing to do?? I typically let it be my cheat, but this weekend I decided I wanted to make a clean dish to bring so that I could still stay within my nutrition and fitness goals! I found this great recipe on a friends website and decided to try it out. It was delicious and when it was time to go home, there was not much of it less...people actually liked it!! I encourage you all to try it out the next time you are invited to a cookout or get together. Oh and it is super quick and easy to make...SCORE! Kabobs with Apple Cookies

Kabobs Ingredients: Skinless Chicken Breasts1.5lbs 2 Bell Peppers (I used yellow) 1 Red Onion Directions: Cut chicken, bell peppers, and red onions into 1" x 1" chunks. Season with balsalmic vinegar, garlic powder, black pepper, and chipotle chili pepper spice (I used my own judgement as far as how much) I alternated red onion, chicken, bell pepper to make 5 kabobs We grilled them on a all wood charcoal grill Enjoy!! Apple Cookies Ingredients: 2 apples (your choice on brand, we used Pink Lady) Your favorite nut butter (we used sunflower seed butter) Coconut Chocolate Chips (we use Enjoy Lifes nut, soy, and dairy free chips) Nuts (we did not use these) Directions: Core your apples Sliced your apples into thin slices Spread each slice with your nut butter Top each 'cookie' with your choice of toppings (coconut, chocolate chips, nuts, etc) Enjoy!!

Simple Breakfast Pancakes- Gluten and Dairy Free!

I woke up this morning wanting something different for breakfast than my usual steel cut oatmeal, 1/2 banana, and eggs. Apparently so did my hubby! We didn't have much to go with so we had to be creative!! I decided some banana pancakes were in order! Simple Banana Pancakes - Gluten and Dairy Free! Ingredients: 4 eggs 4 small bananas 1/4 tsp baking powder (optional, but recommended for fluffiness!) Directions: 1. Put all ingredients in a blender or food processor and mix it up! 2. Cook in a pan on the stove on medium heat. ENJOY!! :) PS: The other item is organic frozen potato wedges with sauteed onions and salsa!

Clean Enchilada Bake

Clean Enchilada Bake Ingredients: 1 cup of uncooked quinoa 2 cups water 1 small onion, diced 3 garlic cloves, minced 1 Jalopeno, seeded and minced 1 red pepper, seeded and diced 1 cup frozen corn Juice of one lime 1tsp cumin 1tsp chili powder 1 15 oz can of black beans, drained 1 15 oz can of refried black beans 2 cups enchilada sauce (I made my own from www.graciouspantry.com) 2 cups of shredded part skim mozzarella cheese Directions: Preheat oven to 350 degrees and spray a 9x13 pan with cooking spray. Add quinoa and water to a small/medium saucepan and bring to a boil. Simmer for 15  minutes or until all teh water is absorbed. Fluff with a fork and set aside. In a large skillet over medium heat, heat up the olive oil. Then add onion, garlic, jalopeno, peppers, corn, lime juice, cumin, and chili powder. In a large bowl, add quinoa and both cans of black beans. Then add the veggie mixture. Lastly, stir in half the cheese and all the enchilada sauce....
