It's Summer and a time for cookouts! What do you do when you get invited to a cookout?? Do you cheat and eat enormous amounts of food? Do you deprive yourself of any food? What's the best thing to do??
I typically let it be my cheat, but this weekend I decided I wanted to make a clean dish to bring so that I could still stay within my nutrition and fitness goals! I found this great recipe on a friends website and decided to try it out. It was delicious and when it was time to go home, there was not much of it less...people actually liked it!!
I encourage you all to try it out the next time you are invited to a cookout or get together. Oh and it is super quick and easy to make...SCORE!

Edamame Salad
Ingredients:
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tbsp water
- 1 clove of minced garlic
- 3/4 tsp sea salt
- 1/4 tsp black pepper
- 1 pound of cooked, shelled edamame
- 10 plum size tomatoes, chopped and seeded
- 1/2 cup of fresh or freeze dried basil
- 1 small red onion, finely chopped
- 1/2 cup crumbled fat free feta cheese
Directions
- Prepare dressing for salad by combining olive oil, vinegar, water, salt, pepper, and garlic together in a small bowl. Wisk together with a fork.
- Mix edamame, tomatoes, basil, and red onion together in a larger bowl. Toss around to mix well.
- Pour dressing in with other ingredients and toss/stir around.
- Sprinkle feta cheese over the top of the dish.
