Clean Enchilada Bake
Ingredients:
1 cup of uncooked quinoa
2 cups water
1 small onion, diced
3 garlic cloves, minced
1 Jalopeno, seeded and minced
1 red pepper, seeded and diced
1 cup frozen corn
Juice of one lime
1tsp cumin
1tsp chili powder
1 15 oz can of black beans, drained
1 15 oz can of refried black beans
2 cups enchilada sauce (I made my own from www.graciouspantry.com)
2 cups of shredded part skim mozzarella cheese
Directions:
Preheat oven to 350 degrees and spray a 9x13 pan with cooking spray.
Add quinoa and water to a small/medium saucepan and bring to a boil. Simmer for 15 minutes or until all teh water is absorbed. Fluff with a fork and set aside.
In a large skillet over medium heat, heat up the olive oil. Then add onion, garlic, jalopeno, peppers, corn, lime juice, cumin, and chili powder.

Pour the mixture into the 9x13 pain and sprinkle with the other half of the cheese on top. Cover with foil and bake 20 minutes. Remove foil and bake for 10 minutes until cheese is melted. Enjoy!!
