Final Week of 21DFX!

Hello all :)

Today begins my final week of the 21 Day Fix Extreme. This program has CHANGED my life so much! I have found myself again...sounds weird I know. I feel more confident and more in control of my nutrition. I was getting a little burned out on my workouts until this program too. I will definitely be continuing on with these workouts and the extreme portion of the nutrition plan. It is really bittersweet that it all ends in a week. But I am very excited to go full on extreme with my nutrition afterwards and experimenting with different food choices and recipes! I will be posting those recipes on here as well :)

So not really any change this week in my meal plan...I like to keep it simple, but I do have to do the countdown to competition plan for the last 3 days of the 21 days. I am still considering what I am eating the weekend after this...I want to treat myself of course but want to keep it in moderation and make sure whatever I treat myself with is worth it!

Here is my meal plan:

Jesse’s Meal Plan

Meal 1: eggs, ½ banana, feta, oatmeal
Meal 2: yogurt, granola, blueberries
Meal 3: Chicken/Avocado Salad
Meal 4: Shakeology with fruit

Meal 5: Monday - Pork Tenderloin or Turkey Burger with veggies

The only days that I will eat Extreme are today and Monday :)

My workout schedule is as follows:
Friday: Plyo Fix Extreme
Saturday: Upper Body Fix Extreme...I also teach Insanity this day
Sunday: Pilates Fix Extreme
Monday: Lower Body Fix Extreme
Tuesday: Cardio Fix Extreme
Wednesday: Dirty 30 Extreme
Thursday: Yoga Fix Extreme

This is one of my favorite NEW meals...steel cut oatmeal with strawberries and 1 tsp almond butter!

It is always exciting to see your progress when you try on clothes right?!

This was taken earlier this morning. I have lost a total of 6.4lbs so far and still have a week to go. This is huge for someone of my short stature and weight...I am 4'11" tall!

It's been a while...

Hello there! It's been a while huh? Um I think about 3 years!! A lot has happened in those 3 years...3 places of work, pregnancy, and mom life! So what's new?? I worked at a small outpatient clinic...didn't like it! Went to an awesome hospital in the city...LOVED it!! Then after having my son took a position at a local hospital...only 8 minutes from home vs the hospital in the city which was 55 minutes on a good traffic day! Easy Crockpot Salsa Chicken Thighs

Oh my this was a tasty dish this week for us! I paired it with Roasted Zucchini and Sweet Potatoes! Ingredients: 1.5lbs of skinless, boneless, organic chicken thighs 2 cups Organic Salsa...we use Simple Truth brand sea salt, garlic powder, and cumin to taste Directions: Season the chicken with spices Put the chicken in the crockpot Pour the salsa over top of the chicken Cook on low for 4 hours Shred chicken with a fork This dish also freezes very well! Enjoy!

Easy, Paleo Breakfast Casserole

Who doesn't LOVE to have breakfast ready when you awake?? I know that I am short on time so when I FINALLY decided that this was an easy way to get my breakfast in I felt like I got rid of some stress!! I made this on the weekend for the upcoming week and it did not take long at all :) Ingredients: 2 tbsp grass fed butter 1 large sweet potato or yam, diced 1/2 tsp fine sea salt 1lb breakfast sausage 1/2 yellow onion, diced 2 cups chopped spinach 12 eggs, whisked 1/2 tsp garlic powder Directions: Preheat oven to 400 degrees, grease a 9 x 13 baking dish. Toss diced sweet potatoes in butter and sprinkle with salt. Place sweet potatoes on baking sheet and bake for 25 minutes, until soft. Place a large saute pan over medium heat. Add sausage and onion. Cook until no pink remains in sausage. Place meat mixture in baking dish, then add sweet potatoes and spinach, and finally add eggs along with garlic powder. Mix well.
