Ahhh where have I been??

Hello Friends!!

Sorry I have not kept up with my posts lately. It all started with me going out of town and then coming to conclusion that I needed to make some changes in my life...

I am striving to a better Christian, a better wife, a better physical therapist, a better barrel racer, and a better fitness professional!!

Things have been good though. I am still doing P90X3, running challenge groups, and eating mostly clean. I am on week 4 of P90X3/PiYo. I am loving this program!! I can tell that I am getting stronger every week and I am very excited to start next week as I get to incorporate weights!!



Here is my meal plan and workout schedule for Oct 31-Nov 7...

So you are probably wondering what OOT means right?
Well I am headed to TX (my FAV place!!) for my fitness teams annual event The Platinum Edge! I am soo excited about this trip. Last year was my first year and it changed my life drastically so I knew I had to go again this year! So anyway, OOT means Out Of Town :) I do plan to take a lot of my own food, but will prob go out to eat for dinner so I can get some veggies in. Our room has a very small refrigerator and it is packed full of things that you pay for if you move them!! I plan to drink Shakeology for breakfast, an Apple and Rice Cake for morning snack, a Think Thin bar for lunch, and Trail Mix for afternoon snack. I know I can order a salad for dinner.

So due to my trip, I may be off the radar on blog posts for another week or so. Please check back for my next post!!

It's been a while...

Hello there! It's been a while huh? Um I think about 3 years!! A lot has happened in those 3 years...3 places of work, pregnancy, and mom life! So what's new?? I worked at a small outpatient clinic...didn't like it! Went to an awesome hospital in the city...LOVED it!! Then after having my son took a position at a local hospital...only 8 minutes from home vs the hospital in the city which was 55 minutes on a good traffic day! I found out I was prego a few days before Christmas 2016...yes it was planned. For YEARS, we said NO kids ever! My father died in 2015 and my whole thought process on kiddos changed! Landon David arrived 8/14/17 via planned c section...he was breech! I stressed myself out incredibly too much about sleep, breastfeeding, being perfect, etc AND I suffered from Postpartum Depression and Anxiety! One thing I have learned about Motherhood is that you can plan, but you have to expect the unexpected!! Once I accepted this, my anxiety died down A LOT...

Easy Crockpot Salsa Chicken Thighs

Oh my this was a tasty dish this week for us! I paired it with Roasted Zucchini and Sweet Potatoes! Ingredients: 1.5lbs of skinless, boneless, organic chicken thighs 2 cups Organic Salsa...we use Simple Truth brand sea salt, garlic powder, and cumin to taste Directions: Season the chicken with spices Put the chicken in the crockpot Pour the salsa over top of the chicken Cook on low for 4 hours Shred chicken with a fork This dish also freezes very well! Enjoy!

Easy, Paleo Breakfast Casserole

Who doesn't LOVE to have breakfast ready when you awake?? I know that I am short on time so when I FINALLY decided that this was an easy way to get my breakfast in I felt like I got rid of some stress!! I made this on the weekend for the upcoming week and it did not take long at all :) Ingredients: 2 tbsp grass fed butter 1 large sweet potato or yam, diced 1/2 tsp fine sea salt 1lb breakfast sausage 1/2 yellow onion, diced 2 cups chopped spinach 12 eggs, whisked 1/2 tsp garlic powder Directions: Preheat oven to 400 degrees, grease a 9 x 13 baking dish. Toss diced sweet potatoes in butter and sprinkle with salt. Place sweet potatoes on baking sheet and bake for 25 minutes, until soft. Place a large saute pan over medium heat. Add sausage and onion. Cook until no pink remains in sausage. Place meat mixture in baking dish, then add sweet potatoes and spinach, and finally add eggs along with garlic powder. Mix well.
