Who doesn't love a easy meal?
Crockpot Chicken
Directions:
- Buy a whole chicken and clean out the giblets
- Ball up 3 pieces of foil and put them in the bottom of your crockpot
3. Coat chicken in coconut oil and your favorite seasonings
4. Place whole chicken in crockpot
5. Cook on low for 8 hours
Warning this chicken will be super tender and may fall apart while getting it out of the crockpot!!
I also scooped out the liquid and refrigerated it, scraped off the fat the next day, and froze it. You can use this to make gravy, soup, etc.
I also added the chicken bones and skin to some water and spices in the crockpot and cooked on low for 12 hours to make broth. After removing the bones and skin, I added lentils and veggies and cooked on low for 3 hours.
The chicken made us 8 servings of chicken and 12 servings of soup!!
