Who doesn't love a comfort food in the fall and winter??
After we have had frigid temperatures so far this November, I decided last week I was going to make Chili!! This dish really hits the spot!
Crockpot Meatless Chili
Ingredients:
- 1 cup quinoa
- 3 garlic cloves, minced
- 1 onion, chopped
- 2 cans (14.5 oz) of diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 tsp chipotle chili spice
- 1/2 tsp sea salt
- 3/4 tsp garlic powder
- 1.5 tbsp chili powder
- 2 tsp cumin
- 1.5 tsp paprika
- 1 tsp honey
- 1 tsp cayenne
- 1/2 tsp coriander
- 2 cans (15 oz) black beans, drained and rinsed
- juice of 1 lime
- avocado
- part skim mozzarella cheese
Directions:
Mix all ingredients except for cheese and avocado in crockpot.
Cook on low for 6 hours.
Add avocado and cheese to your dish
