An Update!

I am officially on week 3 of my P90X3/21 Day Fix Hybrid! My schedule this past week and upcoming week are as follows:
Monday: Total Synergistics
Tuesday: AgilityX
Wednesday: Yoga Fix
Thursday: The Challenge
Friday: Pilates Fix
Saturday: Incinerator
Sunday: Rest

I am absolutely LOVING this mix of programs. I am getting all around workouts from cardio to weights to yoga to pilates. The workouts are all 30 minutes long which is great for someone with limited time like myself!! Next week is my 1st recovery week and then I really start lifting :) This girl loves to lift heavy!!


I have been in a business bootcamp for the last 2 weeks and have 2 weeks left. It has been tough scheduling my time around horses, workouts, business, and work; but this morning I decided that I have to run my day and not let it run me!

I am excited to share that I have been able to barrel race the last 2 weekends and best of all Bully (pictured below) has made some great runs for having over a year off!! We did not pull a paycheck this weekend, but it really did not matter :) Fingers and toes crossed that Bully stays painfree!! I sure have missed running him!


What are you doing this Memorial Day?? My plans are kind of up in the air due to my hubby working. We plan to grill out later (clean of course), but I did make time to spend with the horses this morning! I just love my 'barn time'! It really soothes the soul and makes you realize how much you have to be thankful for! I can go to the barn and forget all my worries!

Lastly, in just a few short weeks a new program will be out! I already have a few challengers lined up for my PiYo group. I cannot wait to do PiYo myself!! It is a low impact workout that includes flexibility, strength, and cardio! It is the best of ALL worlds...it includes everything and is safe for anyone no matter age or fitness level!

It's been a while...

Hello there! It's been a while huh? Um I think about 3 years!! A lot has happened in those 3 years...3 places of work, pregnancy, and mom life! So what's new?? I worked at a small outpatient clinic...didn't like it! Went to an awesome hospital in the city...LOVED it!! Then after having my son took a position at a local hospital...only 8 minutes from home vs the hospital in the city which was 55 minutes on a good traffic day! Easy, Paleo Breakfast Casserole

Who doesn't LOVE to have breakfast ready when you awake?? I know that I am short on time so when I FINALLY decided that this was an easy way to get my breakfast in I felt like I got rid of some stress!! I made this on the weekend for the upcoming week and it did not take long at all :) Ingredients: 2 tbsp grass fed butter 1 large sweet potato or yam, diced 1/2 tsp fine sea salt 1lb breakfast sausage 1/2 yellow onion, diced 2 cups chopped spinach 12 eggs, whisked 1/2 tsp garlic powder Directions: Preheat oven to 400 degrees, grease a 9 x 13 baking dish. Toss diced sweet potatoes in butter and sprinkle with salt. Place sweet potatoes on baking sheet and bake for 25 minutes, until soft. Place a large saute pan over medium heat. Add sausage and onion. Cook until no pink remains in sausage. Place meat mixture in baking dish, then add sweet potatoes and spinach, and finally add eggs along with garlic powder. Mix well. Place in oven and bake 25-30 minutes. E...

Paleo Mustard Balsamic Chicken

This dish is super easy and makes quite a bit of chicken. If you know me, you know I am super busy so I like to have a lot of food cooked before the work week starts. That means that this dish is a WINNER in my book! Ingredients: 8 boneless chicken thighs 1 tbsp dijon mustard 1/4 cup balsamic vinegar 2 tbsp fresh lemon juice 2 tbsp rosemary 1 garlic clove, minced sea salt and black pepper to taste Directions: Combine mustard, balsamic vinegar, garlic, rosemary, lemon juice, salt, and pepper in a bowl Place chicken in marinating bowl and mix well; marinate for 30 minutes on the counter Preheat oven to 375 degrees Place chicken on a baking dish and empty remaining marinate on top Place in oven and bake for 1 hour Enjoy!
