Body Beast Progress

Well I am about to begin Week 3 of Body Beast. I am following the plan mostly but I have tweaked it to fit my fitness class schedule.

I really love this program so far and I know it is going to really help me gain more lean muscle!! I do miss my P90X3/21 Day Fix hybrid from this Spring, but I plan to stick to Body Beast then move on to my hybrid program :)

On Week 2, I really decided to clean up my diet more. I have been letting SUGAR control me far too long... I have been sneaking clean chocolate chips, clean banana muffins, and buying Cadburys Chocolate every time I stop at the grocery store...yea I just admitted that out loud! I was craving chocolate constantly!!! So last week (week 2 of Body Beast), I made a commitment to eat clean 100% until Sept. 19 when we plan to celebrate our 6th Wedding Anniversary. I will be having a cupcake that I saved and froze like a week ago and we will be going out to dinner that evening. Anyway, I am really happy with my results. I wish I would have paid more attention to the scale Monday, but by Friday I think I was down about 4lbs!!

People often ask me how I can fit everything in...fitness, eating clean, working 10 hrs a day, horses, family time, etc. Well I get up at 4am and get my workout in FIRST thing. I make it a priority and I get it DONE. I don't LOVE getting up at that time but it just has to happen this way for me. I encourage all of you to get you to get up just a little bit earlier...for you, be selfish; and get that workout in!! Then nothing can come up later to get in your way of working out and you cannot make excuses! I can promise you that I have NEVER regretted getting up and working out!


One way to keep yourself motivated is to buy new workout gear when you have achieved some fitness goal! I LOVE new clothes :) Here is my newest outfit!


Now back to the Body Beast program. It is full of huge men and I am afraid that that will scare women away from this program. Did you know that you won't become manly if you lift weights?? You just burn more calories and develop lean muscle!

It's been a while...

Hello there! It's been a while huh? Um I think about 3 years!! A lot has happened in those 3 years...3 places of work, pregnancy, and mom life! So what's new?? I worked at a small outpatient clinic...didn't like it! Went to an awesome hospital in the city...LOVED it!! Then after having my son took a position at a local hospital...only 8 minutes from home vs the hospital in the city which was 55 minutes on a good traffic day! I found out I was prego a few days before Christmas 2016...yes it was planned. For YEARS, we said NO kids ever! My father died in 2015 and my whole thought process on kiddos changed! Landon David arrived 8/14/17 via planned c section...he was breech! I stressed myself out incredibly too much about sleep, breastfeeding, being perfect, etc AND I suffered from Postpartum Depression and Anxiety! One thing I have learned about Motherhood is that you can plan, but you have to expect the unexpected!! Once I accepted this, my anxiety died down A LOT...

Easy Crockpot Salsa Chicken Thighs

Oh my this was a tasty dish this week for us! I paired it with Roasted Zucchini and Sweet Potatoes! Ingredients: 1.5lbs of skinless, boneless, organic chicken thighs 2 cups Organic Salsa...we use Simple Truth brand sea salt, garlic powder, and cumin to taste Directions: Season the chicken with spices Put the chicken in the crockpot Pour the salsa over top of the chicken Cook on low for 4 hours Shred chicken with a fork This dish also freezes very well! Enjoy!

Easy, Paleo Breakfast Casserole

Who doesn't LOVE to have breakfast ready when you awake?? I know that I am short on time so when I FINALLY decided that this was an easy way to get my breakfast in I felt like I got rid of some stress!! I made this on the weekend for the upcoming week and it did not take long at all :) Ingredients: 2 tbsp grass fed butter 1 large sweet potato or yam, diced 1/2 tsp fine sea salt 1lb breakfast sausage 1/2 yellow onion, diced 2 cups chopped spinach 12 eggs, whisked 1/2 tsp garlic powder Directions: Preheat oven to 400 degrees, grease a 9 x 13 baking dish. Toss diced sweet potatoes in butter and sprinkle with salt. Place sweet potatoes on baking sheet and bake for 25 minutes, until soft. Place a large saute pan over medium heat. Add sausage and onion. Cook until no pink remains in sausage. Place meat mixture in baking dish, then add sweet potatoes and spinach, and finally add eggs along with garlic powder. Mix well.
