Weekly Update!

I have a great week :) My hubby is back in town from Colorado and his Snowboarding trip! I am on my last week of Round 2 of the 21 Day Fix Extreme. So Sunday, I did skip Yoga, but it was because I spent the time with my hubby. Here is one of my breakfasts this week! It was delicious!! For my 21 Day Fixers, this is  2 yellow, 1/2 purple, and 1 red. Here is a shot from this morning's workout. I am really noticing a big difference in my lean muscle! Yay! My arms and legs are so much more toned. Clean Salmon Cakes

Ingredients: 1 small can of Pink Salmon (drained) 1/4 cup Almond Flour 1 large Egg 1/2 Onion, chopped 1 tsp Frank's Red Hot Sauce Mrs Dash Garlic and Herb to taste 1 tsp coconut oil Directions: Heat 1 tsp of coconut oil in non stick skillet Cook each patty thoroughly, turning several times until browned on both sides Enjoy!!

Weekly Update!

So last weekend was not my best with nutrition. I ate mostly clean but not the right portions. It happens and it's in the past. I cleaned up my diet this week and shed some extra pounds and that yuck feeling this week! I was able to increase my weights with the Upper Body workout that I am doing too! I have always been a slacker when it comes to increasing weights as you go :( so I am determined to work on that this year! I want more toned muscles and it's not going to happen if I don't increase my weights! Here is one of my dinners this week. It's pork tenderloin cooked in the crockpot (http://dianafreyaldenhoven.blogspot.com/2015/02/clean-crockpot-pork-tenderloin.html), roasted asparagus, and raw sweet peppers. Clean French Toast

I was so proud of myself when I thought "Hey, I can make french toast clean!" Haha! Anyway, I decided to try it out this weekend and it was a hit! I am the only one that tried it, but I know a good meal! Ingredients: coconut oil 2 slices of Ezekiel bread 2 eggs 1 cup strawberries 2 tsp almond butter Directions: Heat coconut oil in skillet on medium Crack two eggs and beat them Dip each slice of bread in eggs Cook in skillet  Spread 1 tsp almond butter on each slice of bread and top with strawberries  I scrambled the rest of the egg mixture in the skillet after I cooked my french toast Enjoy! For my 21 Day Fix peeps, this would be 2 yellow, 1 purple, 1 red, and 2 tsp.

Beef and Butternut Squash Stew

This recipe is amazing and definitely hits the spot when it comes to a chilly day. Ingredients: coconut oil raw lean beef stew meat, boneless, cut into 2" cubes 1/2 red onion, chopped 1 green bell pepper, chopped 1/2 red bell pepper, chopped 4 garlic cloves, minced 2 medium tomatoes, chopped 1 cup low sodium organic beef broth sea salt to taste ground black pepper to taste 2 cups cubed butternut squash Directions: Heat oil in a large saucepan/skillet over medium-high heat Add beef; cook; stirring frequently for 4-5 minutes or until the beef is brown Add onion, bell peppers, garlic, and tomatoes; cook, stirring frequently for 4-5 minutes Add broth, salt, and pepper and bring to a boil Reduce heat to medium/low and cook, covered for 40 minutes Add squash and cook for 12 minutes Enjoy!

Weekly Update!

I just woke up and ate Chocolate Pancakes...don't worry they are clean :) http://dianafreyaldenhoven.blogspot.com/2014/09/protein-pancakes.html I wanted to give you all an update! It's been a week since I finished my 1st Round of the 21 Day Fix Extreme and I still see abs!! I am up 2lbs but who cares! My weight fluctuates BIG TIME!! Your worth is not determined by your weight! I feel amazing and I am happy with how I look today so 2lbs is NOT going to ruin my day!! I am currently on Day 5 of Round 2 of the #21dfx! Yesterday was leg day and I could really tell a difference in my strength! LOVE that feeling :) I got my Ultimate DVDs in this week and will be trying out the first one tomorrow! Clean Spicy Spaghetti

If you're like me you LOVE comfort food! I love making up clean recipes that still hit the spot. My hubby rated this one in TOP 5 recipes...woohoo!! I had been dying to buy a Veggetti (http://www.amazon.com/Veggetti-Spiral-Vegetable-Slicer-Veggie/dp/B00IIVRB3W) months and about a month or 2 ago, finally bought one. Then...I didn't use it haha. Well last night was our first time using the Veggetti! I used Zucchini to make some spaghetti. From my research, they said that you need 1 zucchini per person and I would say that that is about right! We also sauteed them in coconut oil in a non stick skillet until they were cooked. We topped our veggetti noodles with a yummy meat sauce! Ingredients: 1lb grass fed ground beef 1/2 red bell pepper, finely chopped 1/2 red onion, finely chopped 2 eggs 1 finely minced garlic clove 2 tbsp almond flour 1 tbsp curry powder 1/2 tsp cumin 1 tsp paprika 1/2 tsp black pepper sea salt to taste jar of organic spaghetti sauce coconut ...

Clean Breakfast Bowl

This clean breakfast tastes sooo good, you'd swear it's dirty lol. Great weekend breakfast or brunch and totally 21 Day Fix Approved!! I hope you enjoy it as much as we did!! This recipe makes 2 servings. Ingredients: 1 large sweet potato 4 eggs 4 clean turkey sausage links (we used Applegate brand in the frozen organic section) part-skim mozzarella cheese Directions: Preheat the oven to 425 degrees Cut your sweet potato up into cubes & put in a medium bowl Add 1-2 tsp of extra virgin olive oil to sweet potatoes and swish around until they are evenly covered Add desired seasonings to taste to potatoes and swish around until evenly covered (we used chili powder, sea salt, and garlic powder) Cook sweet potatoes for 30 minutes in oven (we usually do this a day or so before eating this for breakfast) Cook sweet potatoes and sausage in skillet with coconut or olive oil until sausage and sweet potatoes are warmed and then put in serving bowl Cook eggs over...

21 Day Fix Extreme Countdown to Competition

Are you ready?? I ate and worked out like a Competitor the last 21 Days. It was tough. It was exhilarating. It was LIFE CHANGING!! Honestly,  I don't know what it's like to be overweight. But I do know what it feels like to be stuck, hopeless, unhappy, and lost. I was there...21 days ago. I was eating clean, but not in the right portions. I was burned out on my workouts. I did them but I didn't enjoy them. With this program, I found my HIGH from working out and it changed the way I look at my food! I LOVE carbs, chocolate, and my cheat meals. I will still have them from time to time, but my goals and my motivation mean more to me right now! 7.4lbs and 8.25" GONE! I just followed a simple (not easy) meal plan and worked out 30 minutes a day! Thank you to my #1 Supporter, my hubby and my awesome accountability group! I couldn't have done this without them!!!
