- coconut oil
- raw lean beef stew meat, boneless, cut into 2" cubes
- 1/2 red onion, chopped
- 1 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 4 garlic cloves, minced
- 2 medium tomatoes, chopped
- 1 cup low sodium organic beef broth
- sea salt to taste
- ground black pepper to taste
- 2 cups cubed butternut squash
Directions:
- Heat oil in a large saucepan/skillet over medium-high heat
- Add beef; cook; stirring frequently for 4-5 minutes or until the beef is brown
- Add onion, bell peppers, garlic, and tomatoes; cook, stirring frequently for 4-5 minutes
- Add broth, salt, and pepper and bring to a boil
- Reduce heat to medium/low and cook, covered for 40 minutes
- Add squash and cook for 12 minutes
