I had been dying to buy a Veggetti (http://www.amazon.com/Veggetti-Spiral-Vegetable-Slicer-Veggie/dp/B00IIVRB3W) months and about a month or 2 ago, finally bought one. Then...I didn't use it haha. Well last night was our first time using the Veggetti! I used Zucchini to make some spaghetti. From my research, they said that you need 1 zucchini per person and I would say that that is about right! We also sauteed them in coconut oil in a non stick skillet until they were cooked. We topped our veggetti noodles with a yummy meat sauce!

Ingredients:
- 1lb grass fed ground beef
- 1/2 red bell pepper, finely chopped
- 1/2 red onion, finely chopped
- 2 eggs
- 1 finely minced garlic clove
- 2 tbsp almond flour
- 1 tbsp curry powder
- 1/2 tsp cumin
- 1 tsp paprika
- 1/2 tsp black pepper
- sea salt to taste
- jar of organic spaghetti sauce
- coconut oil
Directions:
- Heat coconut oil in a non stick skillet
- Mix all ingredients except spaghetti sauce and coconut oil in a large bowl
- Heat spaghetti sauce in a saucepan on low heat to warm up
- Take meat mixture and cook in skillet
- Once cooked, add spaghetti sauce to meat mixture. Mix well and heat a little longer 5-15 minutes is fine
- Top Zucchini/Veggetti noodles with meat mixture and a sprinkle of part skim mozzerella if desired
