This clean breakfast tastes sooo good, you'd swear it's dirty lol. Great weekend breakfast or brunch and totally 21 Day Fix Approved!! I hope you enjoy it as much as we did!! This recipe makes 2 servings.

- 1 large sweet potato
- 4 eggs
- 4 clean turkey sausage links (we used Applegate brand in the frozen organic section)
- part-skim mozzarella cheese
Directions:
- Preheat the oven to 425 degrees
- Cut your sweet potato up into cubes & put in a medium bowl
- Add 1-2 tsp of extra virgin olive oil to sweet potatoes and swish around until they are evenly covered
- Add desired seasonings to taste to potatoes and swish around until evenly covered (we used chili powder, sea salt, and garlic powder)
- Cook sweet potatoes for 30 minutes in oven (we usually do this a day or so before eating this for breakfast)
- Cook sweet potatoes and sausage in skillet with coconut or olive oil until sausage and sweet potatoes are warmed and then put in serving bowl
- Cook eggs over medium, so that they are runny
- Put cheese over sweet potato and sausage mixture
- Put runny eggs (once cooked) over mixture
